Breakfast is a bountiful buffet of Swiss muesli and nutritious cereals, crisp whole grain breads, ripe cheeses, fine charcuterie and melt-in-your-mouth pastries. The honey comes from the beehives on our roof, the herbs from our own garden. Eggs – guaranteed cage-free – are prepared to order, while you wait, at live cooking stations. They’re accompanied by a self service juicer, aromatic coffee and premium tea.
For dinner, Executive Chef Paul Clune has devised a menu of sophisticated Modern Australian cuisine with Swiss accents. Fresh seasonal produce is crafted into healthy dishes that surprise and delight the palate. To guarantee both quality and sustainability, at least 70% of our ingredients come from within 200km of Sydney – from farm to table. Premium wines and beverages from around Australia and the world complete your dining experience.
