Swissotel Sydney is thrilled to appoint Audi Budiman as the Executive Chef at Swissotel Sydney. With 21 years of experience in award-winning hotels and casinos across Asia, the Middle East, and Australia, Audi brings a wealth of culinary expertise to our team.

 

Audi and his wife, Sylvia, relocated to Melbourne in 2009, where he joined Crown Casino Melbourne as a Sous Chef. In April 2012, he advanced to Chef de Cuisine at The Star Sydney. Over the past decade, Audi gained extensive international experience, working with leading hotels in the Philippines, the United Arab Emirates, Vietnam, and China before returning to Australia to join us.

 

During his tenure in Dubai, UAE, when Michelin stars were first awarded in 2022, Audi’s leadership earned two outlets prestigious accolades: 1 Michelin star for Ossiano and 1 Michelin star for Hakkasan at Atlantis The Palm Dubai.

 

A passionate book lover, Audi travels with a personal collection of over 750 books. Beyond cooking and reading, he enjoys exploring local wet markets to discover seasonal produce wherever he works or visits. Known for his versatility, Audi appreciates a wide range of cuisines but has a particular fondness for lemongrass and tamarind, which he skillfully incorporates into his dishes. His signature lemongrass chimichurri sauce is a must-try.

 

Audi officially commenced his role as Executive Chef at Swissotel Sydney this week. We warmly welcome Audi and Sylvia to the Swissotel Sydney family and look forward to seeing his creativity and expertise shine in the years ahead.
